(singel blind): Medium brilliant garnet, fine tears, tints slightly the glass. Light barnyard, dark berries, liquorice, floral, cacao beans. Medium to plump body, very well balanced, nearly soft. Very soft but persistent finish. Score: 50 + 3 for optic + 15 for bouquet + 17 for taste + 8 for overall = total score of 93.

Sampled 12/31/03. We opened two pristine bottles of this wine (from different importers) and each was the same. Decanting time for the first tasting was well under an hour, and this wine neither got better nor worse with more time. The prodigious percentage of Cab Franc in Cheval does not come through and hit you in the face like so many California meritages do that are Cab Franc based (e.g. Viader, even it its best years). The wine is complex and dreamy smooth as the tannins have now completely softened. It's at its peak and you'd hate to waste $500+ bottle by sitting on it too many more years.

(single blind): Brilliant garnet, medium tears. Cool moss, dark fruit, fine oak - over time developping towards honey comb. Plump body, dark fruit, very well balanced. Long finish, impregnating. Score: 50 + 3 for optic + 14 for bouquet + 9 for taste + 9 for overall = total score of 95
