Long Finish.   A truly remarkable white wine, the 1999 Chevalier-Montrachet is a beautiful green-yellow that has a soft and glowing core. Initially, this wine was very tight. However, with extended decanting, the wine softened and began to show the both the power and finesse of this magical vineyard. Its most distinguished quality was the cotton candy like mouthfeel... nearly perfect. The mouthfeel influenced the flavors, which were of soft citrus fruits and minerals. Lay it down in the cellar, or decant it for at least 4 hours.
